Thanksgiving 2010

Even though our plans for the weekend changed (due to an unexpected funeral and horrible weather conditions) we had a wonderful Thanksgiving. The kids ended up with a full week of vacation because we had two snow days so we had some great family-time playing games and watching movies together. On Thanksgiving we shared our usual yummy meal with my niece Katie and her roommate. That night we had a fun visit with my parents. So many things to be grateful for!

Now what to do with all the leftovers? We are going to make one of my mom's delicious recipes:

Thanksgiving Casserole

6 medium potatoes, peeled, cooked & mashed (or your leftover ones)
4 cups turkey, diced
6 cups stuffing
2 cans cream of chicken or mushroom soup
3/4 cup sour cream
4 ounces cream cheese, softened
1 tsp garlic powder
1 1/2 cups shredded cheddar cheese

Mix turkey, soup, garlic powder, and 1/4 cup sour cream. Mix mashed potatoes with remaining sour cream and cream cheese. In a greased casserole dish layer stuffing, turkey mix, and potato mixtures. Top with cheese. Bake at 350 degrees for 30-35 minutes.
